OneTwo Double Sting DIPA is a vibrant, modern take on the Double IPA, amplified by an intensive double dry-hopping technique. The profile is dominated by the New Zealand Nectaron hop, which delivers a wave of exotic stone fruits and tropical richness. This is artfully balanced by the American Athanum hop, contributing unique sweet floral notes and a subtle peppery spice. The addition of honey enhances the perception of fruitiness without adding cloying weight, supporting a lean, grainy malt backbone. Though high in alcohol at 8.3%, it remains impressively drinkable, finishing with a firm bitterness and a lingering, resinous fruit character that defines the style.
Appearance. Deep gold to light orange-copper (SRM 7-9). Features a moderate-sized, persistent off-white head with excellent lacing. Slight haze is present due to the double dry-hop additions.
Aroma. High intensity hop aroma featuring prominent stone fruit, peach, and pineapple from Nectaron, complemented by grapefruit and a distinct peppery spice from Athanum. A supportive, neutral, grainy maltiness sits in the background with a subtle floral honey note. Clean fermentation profile.
Taste. Initial impression is a burst of tropical and stone fruit. Strong hop flavors of nectarine and passionfruit are followed by a mid-palate of spicy pepper and citrus peel. Low, clean, supportive malt character provides a soft foundation. High bitterness that is firm but not harsh. Finishes medium-dry with a lingering hoppy and resinous aftertaste.
Mouthfeel. Medium body with a smooth, slightly silky texture. Moderate-high carbonation provides a crisp bite. A restrained, smooth alcohol warmth is present but well-integrated, with no hop-derived astringency.
