This refreshing Gose leads with an aromatic perfume of Calamansi, delivering vibrant notes of tart Philippine lime and bright citrus zest. The underlying grist of Pilsner and wheat malts provides a soft, doughy foundation that balances the clean lactic acidity. A distinct mineral character from the addition of sea salt emerges on the palate, enhancing the beer’s mouthwatering quality and providing a crisp, saline finish. At a sessionable 4% ABV, it is exceptionally crushable, pairing a light-bodied effervescence with a dry, zesty profile that emphasizes the unique citrus complexity of the fruit over hop bitterness.
Appearance. Medium yellow in color (SRM 3-4) with a moderate to full haze consistent with its unfiltered nature. It features a tall, effervescent white head with tight bubbles and good retention.
Aroma. High intensity aroma dominated by the fragrant, floral citrus perfume of Calamansi. Substantial lactic tartness is present, backed by a light bready and doughy malt character. A subtle, fresh sea salt mineral note is noticeable, complementing the bright fruit profile without any hop presence.
Taste. Initial impression is a sharp, refreshing sourness driven by lactic acid and tart calamansi fruit flavors. The mid-palate reveals soft, grainy wheat flavors. Bitterness is very low, as the balance is shifted toward acidity. A light but definite salt character appears toward the finish, enhancing the citrus flavors. The aftertaste is clean, dry, and mouthwatering.
Mouthfeel. Medium-light body with high carbonation that feels lively and effervescent on the tongue. The salt addition provides a subtle tingly, mouthwatering sensation that rounds out the acidic sharpness. No alcohol warmth is perceived at this strength.
