OneTwo’s Bitter End is an assertive American IPA that champions the classic West Coast profile with its uncompromisingly clean and bitter resolve. The sensory experience is led by a vibrant aromatic bouquet of sharp citrus and spicy pine, hallmarks of traditional American hops. On the palate, a lean, grainy malt backbone provides just enough structure to support a punchy hop intensity that defines the style. It finishes with a crisp, dry snap and a lingering resinous bitterness that invites another sip. This brew balances high hop expression with a refined fermentation profile, resulting in a refreshingly bright and pungent experience.
Appearance. Brilliant, clear deep gold to light amber (7–9 SRM) with a medium-sized, persistent off-white head that leaves decorative lacing.
Aroma. High intensity hop aroma featuring classic resinous pine, spicy undertones, and sharp grapefruit citrus. Low, clean, bready maltiness provides a subtle foundation, while the fermentation profile remains neutral with no significant esters.
Taste. Initial impression is a quick flash of grainy malt followed immediately by aggressive hop flavors of citrus zest and forest pine. Bitterness is firm and assertive, dominating the mid-palate and persisting into a very dry, clean finish. Aftertaste is decidedly hoppy and resinous, devoid of heavy caramel or toast.
Mouthfeel. Medium-light body with a smooth, crisp texture. Moderate to high carbonation enhances the perception of dryness. Very light, well-integrated alcohol warmth is present without any harshness or astringency.
