This refreshing Wild Specialty Beer presents a vibrant sensory profile centered on tart stone fruit. At a sessionable 3% ABV, it leads with a crisp, acidic snap that highlights a bright, authentic cherry character. The aroma is dominated by zesty red fruit and a subtle, clean lactic sourness that complements a minimalist malt base. On the palate, the experience is brisk and effervescent, balancing a gentle tartness with a bone-dry finish. Its light body and high carbonation make it exceptionally drinkable, emphasizing a clean fermentation profile that allows the essence of the cherry to shine through without cloying sweetness.
Appearance. Deep pink to light ruby hue (SRM 8–12). Pours with a thin, white-to-pinkish head that dissipates quickly due to high acidity and low protein. Clarity is generally clear, though a slight fruit-induced haze may be present.
Aroma. Moderate to high intensity of fresh tart cherries. Clean lactic acidity is prominent, accompanied by low bready malt notes and a hint of lemon zest. Hop aroma is absent. Fermentation character is clean and acidic with very little to no funky Brettanomyces influence.
Taste. Initial impression is of sharp, bright cherry skin and flesh. Malt flavor is very low, providing a neutral cracker-like support. Bitterness is nearly imperceptible, as the balance is driven entirely by acidity rather than hops. The finish is short, clean, and very dry, with a lingering tart fruit aftertaste.
Mouthfeel. Light-bodied and lean. High carbonation provides a prickly, refreshing sensation on the tongue. No alcohol warmth is present given the low ABV. A slight, pleasant fruit-skin astringency may be detected, which enhances the overall dryness.
