This modern Spice, Herb, or Vegetable Beer revives the gruit tradition with an intricate, botanical-forward profile. Leading with the earthy, wildflower bitterness of Yarrow and Ground Ivy, the sensory experience is layered with resinous Sage and Rosemary, balanced by the cooling, aromatic lift of Peppermint and Lemon Balm. Subtle anise notes from Fennel and a faint, piquant warmth from Ginger provide aromatic depth over a clean, crackery malt base. Goat’s Rue adds a rustic edge, while Dill contributes a savory green note. Without the citrus of modern hops, the complex interplay of these botanicals defines the character, finishing with a unique, lingering herbal dryness.
