This crisp West Coast IPA presents a modern herbal twist on a classic profile. Built on a clean, grainy malt foundation, it showcases the assertive bitterness expected of the style, though tempered by a unique botanical edge. While classic hops lead with citrus and resinous needles, the addition of tarragon introduces a sophisticated layering of anise and peppery spice. This herbal integration results in a distinctive licorice finish that lingers alongside a firm, dry bitterness. Appearance. Medium gold to light amber in color (7-9 SRM). Pours with a medium-sized white head that shows good persistence and leaves light lacing. Brilliant clarity as expected for the West Coast sub-style.
Aroma. High intensity hop aroma featuring notes of grapefruit, pine resin, and floral undertones. A distinct herbal aroma of tarragon provides a spicy, anise-like quality. Clean, low grainy malt sweetness provides a neutral backdrop with a clean fermentation profile.
Taste. Initial impression is characterized by a sharp, clean bitterness. Medium-high hop flavors of citrus peel and resin are immediately followed by the botanical influence of tarragon, contributing a savory, licorice-like depth. The malt is low and grainy, supporting the hop-forward balance without adding sweetness. Finish is very dry with a lingering, bitter, and spicy herbal aftertaste.
Mouthfeel. Medium-light body with a smooth, crisp texture. Carbonation is medium-high, enhancing the dry finish. Alcohol warmth is very light and well-integrated; no astringency or harshness from the hops or herbs.
