OneTwo 41 - West Coast IPA w/ Chinook & Columbus
This West Coast-style American IPA delivers an assertive, resinous punch driven by the classic pairing of Chinook and Columbus hops. It leads with a sharp aromatic profile of sticky pine needles and pungent grapefruit zest. The sensory backdrop features a lean, neutral malt base that stays out of the way, allowing the aggressive bitterness to define the experience. A brisk, dry finish accentuates the hop oils, leaving a clean yet lingering trail of resin and citrus pith. It is a quintessential throwback to bold, bitter ales, focusing on hop intensity and a crisp, refreshing structure without any distracting yeast esters.
Appearance. Deep gold to light amber (7–9 SRM). Brilliant clarity with a tall, dense white head that exhibits excellent persistence and leaves significant lacing on the glass.
Aroma. High intensity. Dominated by pungent, resinous pine and spicy, dank earthiness from Columbus, complemented by bright grapefruit and herbal notes from Chinook. Malt is low and neutral, presenting as clean cracker or pale grain. Fermentation is very clean with no notable esters.
Taste. Initial impact is a wave of firm, resinous bitterness that dominates the palate. Strong hop flavors of pine forest, citrus pith, and black pepper. The malt is minimalist, providing just enough light toasted bread character to support the heavy hop load. Finishes very dry and crisp with a long-lingering, clean bitterness and no harshness.
Mouthfeel. Medium-light body with a smooth, crisp texture. Moderate to high carbonation provides a refreshing bite. Alcohol warmth is light and well-integrated. No astringency despite the high hop load.
