This Wild Specialty Beer presents a vibrant sensory fusion of tropical fruit and controlled spice. The aroma is dominated by fresh, juicy mango and a subtle floral capsicum note from the habanero, backed by a clean lactic tartness. On the palate, the perceived sweetness of the mango is tempered by a crisp, mild sourness and a gentle, building heat from the peppers. The fermentation character is lean and bright, allowing the specialty ingredients to shine over a neutral malt base. It finishes exceptionally clean with a lingering fruity essence and a delicate peppery tingle that balances the refreshing acidity.
Appearance. Deep gold to pale orange (6-8 SRM) with a slight haze. A thin, white head with poor retention, typical of acidic wild ales, leaving minimal lacing.
Aroma. High intensity; prominent aromas of ripe, pulpy mango and tropical fruit esters. Subtle earthy and floral notes of habanero pepper are evident. A moderate lactic sourness provides a sharp, clean edge, while malt remains a neutral, crackery backdrop with no hop aroma.
Taste. Initial impression of fleshy mango fruitiness. A moderate, clean lactic acidity balances the fruit character. Low hop bitterness allows the habanero's capsicum flavor and mild heat to emerge in the mid-palate. The finish is off-dry and crisp, with a lingering tropical fruit aftertaste and a light spicy warmth.
Mouthfeel. Medium-light body with high carbonation that creates a spritzy, refreshing texture. A noticeable but controlled habanero prickle provides a unique tactile warmth, separate from the light alcohol presence; no astringency.
