This vibrant Straight Sour Beer presents an intense, fruit-forward profile driven by a massive fresh-fruit fermentation. A lean grain bill provides a neutral stage for the lush interplay of ripe Australian Strawberry and tropical Guava, while Chinese Goji berries add a unique, tart depth. The aroma is sharply acidic with a bright lift from Preserved Lemon and the subtle, hydrating essence of Fijian Coconut Water. On the palate, a clean lactic sourness from the house culture is masterfully balanced by a delicate kiss of sea salt, resulting in a crisp, refreshing, and deeply aromatic experience that remains highly drinkable.

Appearance. Pale pink-gold (approx. 3-5 SRM) with a slight haze from fruit solids. Large, dense, white head with poor retention. Effervescent with light lacing.

Aroma. High intensity lactic sourness. Dominant tart fruit notes of Goji berries and Preserved Lemon. Moderate fruity esters of ripe strawberry and tropical guava. Very low crackery malt character; no hop aroma. Clean fermentation.

Taste. Initial impression is sharply acidic and clean. Dominant lactic sourness is complemented by bready, crackery malt. Intense flavors of fresh strawberry and guava emerge mid-palate. No hop bitterness or flavor. Finish is bone-dry and crisp with a lingering saline mineral note from the sea salt and a citrusy-lemony aftertaste.

Mouthfeel. Light body with high carbonation. Crisp acidity provides a prickly sensation. Very low alcohol warmth. Refreshing and clean without astringency.
