PAV LOVER* is a decadently creamy Nitro Straight Sour Beer designed to replicate the experience of a pavlova dessert. The oat and spelt-heavy grain bill provides a substantial, bready foundation for a vivid fruit profile featuring ripe strawberry, zesty kiwifruit, and jammy blueberry. A house lacto blend delivers a clean, sharp lactic acidity that cuts through the velvety sweetness of added milk sugar. The nitrogen infusion transforms the texture into a luxurious experience, balancing the tartness with a thick, meringue-like mouthfeel. Expressive yeast esters complement the fruit, leading to a vibrant, multi-layered finish that perfectly captures the essence of the classic treat.
Appearance. Deep pink to purple hue (10–14 SRM) with significant opacity from fruit solids and grains. Pours with a thick, dense, creamy pink-tinted head with exceptional retention and a cascading nitro effect.
Aroma. High intensity with bold fresh strawberry and tart kiwifruit leading the profile. A sharp lactic sourness is balanced by sweet, milky creaminess and a bready, biscuity malt backbone from oats and spelt.
Taste. Intense initial impression of tart berries and bright kiwifruit. A clean, dominant lactic acidity provides a sharp counterpoint to the sweet milk sugar. Bready, grainy flavors from the spelt and oats emerge mid-palate, while hop bitterness remains undetectable. The finish balances lingering fruit sweetness with refreshing acidity.
Mouthfeel. Full-bodied and viscous; exceptionally creamy and smooth due to the nitro infusion and milk sugar. Carbonation is low but feels soft and fine. Noticeable but well-integrated alcohol warmth at 6.9% ABV.
