This Wild Specialty Beer is an indulgent, high-impact sensory experience defined by a massive addition of Strawberry and Blueberry. The aroma is dominated by fresh, jammy berry notes intertwined with creamy vanilla and a soft lactic tang. On the palate, the sheer volume of fruit creates a thick, smoothie-like profile where the natural acidity of the berries is tempered by the silky sweetness of milk sugar. Hints of wild fermentation provide a subtle, funky complexity that prevents the richness from becoming cloying. It is a bold, modern interpretation that pushes the boundaries of fruit integration and texture.
Appearance. Opaque, deep magenta-purple with a thick, pulpy consistency. Pours with a dense, pink-tinted head that shows moderate to low retention, leaving a stained lacing on the glass.
Aroma. High intensity. Explosive aromatics of sun-ripened Strawberry and earthy Blueberry skin. Secondary notes of sweet vanilla bean and a milky, cream-like sweetness. A faint, clean lactic sourness and very low wild funk provide a structural backbone.
Taste. Intense, jammy fruit flavors of Strawberry and Blueberry lead the way. The mid-palate is rich and velvety due to milk sugar, while vanilla adds a dessert-like layer. Bitterness is non-existent. A firm but balanced acidity cuts through the sugar, finishing with a lingering, sweet-tart fruit purée character.
