This Wild Specialty Beer delivers an overwhelming sensory experience driven by a massive infusion of Raspberries. The aroma is a high-intensity explosion of fresh berry coulis, supported by bright passionfruit-like esters and a sharp, clean lactic acidity. On the palate, the immense fruit load provides a jammy, viscous texture that masks the potent 10.1% ABV, though a well-integrated alcohol warmth persists. The flavor profile is dominated by tart, puckering Raspberries and a hint of tropical complexity, finishing with a lingering, acidic snap. It is a bold, modern interpretation of an imperial sour, balancing extreme fruit density with wild fermentation character.
Appearance. Deep, opaque magenta-red with a thick, frothy, pink-tinted head that shows moderate retention and heavy lacing.
Aroma. High intensity; dominant fresh raspberry and jammy fruit notes, followed by sharp lactic sourness, subtle tropical passionfruit esters, and a hint of earthy wild yeast character.
