Inspired by the vibrant energy of Miami, this Florida Weisse takes the traditional Berliner Weisse into tropical territory. A sharp, clean lactic sourness from One Drop’s in-house culture provides an assertive foundation for a lush fruit profile. Intense raspberry and dragonfruit drive a brilliant magenta color and deep berry flavors, while watermelon adds a juicy, refreshing sweetness. The addition of coconut water provides a unique roundness and subtle mineral depth to the finish. With a soft bready wheat base and high effervescence, this brew remains crisp and exceptionally dry despite its amplified fruit character and elevated alcohol content.
Appearance. Striking deep pink to magenta in color. Large, frothy, pink-tinted head with moderate to poor retention. Pronounced haze from fruit solids and wheat proteins with high effervescence.
Aroma. High intensity aromatics of fresh raspberry and candy-like watermelon. A sharp, clean lactic sourness is immediately apparent, accompanied by subtle tropical dragonfruit and a faint, sweet coconut water undertone. No hop aroma; light doughy wheat provides a background structure.
Taste. Dominant, bright lactic sourness is paired with an explosion of red fruit. Raspberry provides tartness, while watermelon adds a fleshy, sweet-fruit mid-palate. Subtle earthy dragonfruit notes emerge late. A soft bready wheat malt flavor balances the acidity. No hop bitterness or flavor. The finish is exceptionally dry and refreshing with a lingering tart berry and coconut water aftertaste.
Mouthfeel. Medium-light body with a slight silken texture from the coconut water. High carbonation leads to a prickly, effervescent sensation. Crisp acidity provides a refreshing bite. Very low alcohol warmth.
