This German Pils showcases a sophisticated intersection of traditional technique and crisp drinkability. Utilizing a meticulous decoction mash and a water profile modeled after České Budějovice, the beer presents a firm malt foundation of toasted cracker and light honey. The use of the house yeast strain from Budvar National Brewery ensures an exceptionally clean fermentation, allowing the moderately-high floral and spicy hop character to shine. It is brilliant gold and highly carbonated, delivering a dry, snap-like finish. The mineral-rich water sharpens the hop bitterness, resulting in a refreshing lager that balances European complexity with a sharp, elegant sensory profile.
Appearance. Deep yellow to brilliant gold (3 SRM). Features a creamy, thick, long-lasting white head with excellent lacing. Brilliant clarity.
Aroma. Moderate to high intensity. Dominated by spicy and herbal hop notes. The malt backbone provides a low but distinct grainy-sweetness, reminiscent of toasted crackers and a hint of honey. Clean fermentation with no esters or phenols.
Taste. Initial malt sweetness of dough and crackers is quickly supplanted by a firm, assertive hop bitterness. Hop flavors are herbal and flowery. The balance is decidedly bitter throughout. The finish is crisp and very dry, with a lingering minerality and a touch of hop spice in the aftertaste.
Mouthfeel. Medium-light body. High carbonation provides a lively, scrubbing sensation. Crisp and refreshing without any harshness, though a slight flinty, minerally sharpness is present from the specific water profile.
