This Wild Specialty Beer is an opulent and transgressive take on the sour genre, defined by an overwhelming presence of ripe banana. The sensory profile is dominated by the massive addition of banana puree, creating a custard-like aromatic profile that blends seamlessly with a sharp, clean lactic acidity. At 10% alcohol by volume, there is a significant but well-integrated warmth that supports the dense, smoothie-like structure. While the wild fermentation provides a crisp, puckering counterpoint, the experience is primarily one of tropical decadence, where the fruit’s creamy texture and natural sugars are balanced by a firm, bright sourness that keeps the palate refreshed despite the high gravity.
