One Drop Brewing Co

This Wild Specialty Beer, drawing on the indulgent Lassi Gose style, offers an intense sensory experience defined by its opulent adjunct additions. The aroma is dominated by jammy Blueberry and tart Raspberry, lifted by the tropical zest of Pineapple. One Drop Brewing Co utilizes Marshmallow and Maple Syrup to create a thick, confectionery-like profile that balances the sharp lactic acidity of the base fermentation. The result is a vibrant, multi-layered profile where the earthy sweetness of the syrup and the creamy marshmallow notes provide a decadent counterpoint to the bright, acidic fruit, all finished with a characteristic hint of saline.

Appearance. Vibrant, opaque deep purple to magenta (25-35 SRM) with a thick, mousse-like pink head that shows surprisingly good retention for the style; heavily hazy and smoothie-like.

Aroma. High intensity aromatics of fresh-picked raspberries and blueberry jam; a secondary tropical note of acidic pineapple follows. Distinctive vanilla-like marshmallow sweetness and a rich, woody maple syrup character are prominent, with a clean, sharp lactic tartness in the background.

Taste. An initial explosion of tart berry and pineapple fruitiness gives way to a mid-palate of creamy marshmallow and decadent maple syrup. The malt character is low and bready, largely supporting the adjuncts. Bitterness is not perceived. The finish is a complex balance of lingering fruit sweetness, lactic acidity, and a subtle saltiness that cleanses the palate.

Mouthfeel. Full-bodied and highly viscous with a thick, creamy, lassi-like texture; carbonation is moderate-low to keep the mouthfeel lush. No alcohol warmth is present; very low astringency from fruit skins.
