Brewed with cherries and wild raspberries, this 5% ABV ale presents an intricate dance between the deep, stone-fruit notes of the cherry and the bright, seedy acidity of the raspberry. The wild fermentation imparts a rustic, underlying complexity that complements the fruit’s sweet-and-tart character without overshadowing it. Appearance. Pours a hazy, vibrant reddish-pink hue (SRM 8-13) with a moderately sized, light pink-tinted head. Retention is fair to moderate, often leaving a thin ring of lacing as the effervescence subsides.
Aroma. High intensity of fresh, wild raspberries and tart cherries dominates the nose. Supporting this is a clean lactic sourness and subtle funk—hints of hay and leather—characteristic of a wild fermentation. Malt is nearly absent, perhaps providing a faint cracked-wheat backdrop, while hop aroma is non-existent.
Taste. The initial impression is one of sharp, refreshing acidity. Vibrant flavors of tart cherry and wild raspberry provide the primary focus, with the fruit sweetness fermented out to a bone-dry finish. A light, crackery malt base provides minimal support. Hop bitterness is very low, as the crisp acidity provides the necessary balance. The finish is clean and lingering with a pleasant fruit-skin tartness.
Mouthfeel. Medium-light body with high, prickly carbonation that enhances the perceived lightness. Alcohol warmth is very low and well-integrated. A slight tannic astringency from the fruit skins adds structure and contributes to a very dry, crisp mouthfeel.
