Omnipollo Levon XV is a vibrant Belgian Tripel that masterfully blends traditional monastic character with the aromatic punch of a Belgian-style imperial pale ale. This effervescent ale leads with an assertive sensory profile of peppery phenols and citrusy esters reminiscent of lemon zest and ripe orange. The signature house use of Simcoe hops introduces a contemporary layer of pine and passionfruit, while the fermentation character remains lean and crisp. On the palate, a delicate honey-like malt sweetness from Pilsner malt is quickly overtaken by a firm bitterness and a remarkably dry, Champagne yeast-driven finish. It remains deceptively light and elegant despite its strength.

Appearance. Deep yellow to pale amber (5–7 SRM). Brilliant clarity with high effervescence. Features a long-lasting, creamy, rocky, white head that leaves dense Belgian lace on the glass.

Aroma. High intensity. A complex bouquet of peppery and clove-like phenols is layered with citrusy esters of orange peel and lemon. Distinctive resinous and floral hop notes from Simcoe provide a modern counterpoint to the soft, grainy-sweet Pilsner malt and light honey-like aromatics. Alcohol is present but soft and well-integrated.

Taste. Initial impression is crisp and highly attenuated. A moderate grainy malt flavor quickly yields to dominant spicy yeast phenols and citrusy esters. Simcoe hops contribute flavors of pine and grapefruit, supported by a medium-high bitterness (approx. 40 IBU). The finish is exceptionally dry and clean, with a lingering aftertaste of floral hops and peppery spice.

Mouthfeel. Medium-light body, feeling lighter than the ABV suggests. Very high carbonation creates a sparkling, effervescent sensation. Alcohol warmth is deceptive and smooth, with no astringency or heavy residual sweetness.
