Fatamorgana is an evocative Double IPA that bridges the gap between a rustic Saison and a modern hop powerhouse. Brewed with a heavy hand of oats and wheat, it presents a signature alluring cloudiness and a soft, pillowy texture. The double dry-hopping process yields an intense aromatic profile of tropical mango, bright citrus, and resinous pine. Despite its 8% strength, the beer remains crisp and highly drinkable, honoring its saison inspiration through a bone-dry finish and a vibrant, lively effervescence. The absence of filtration ensures the full sensory integrity of the hop oils and yeast-driven character remains front and center.
Appearance. Pale gold to light orange (6-8 SRM); alluringly cloudy and opaque; thick, persistent white head with dense lacing.
Aroma. High intensity; dominant aromas of ripe passion fruit, guava, and candied orange zest; supportive bready, grainy malt notes from the oats and wheat; clean fermentation with a faint, pleasant alcohol sweetness.
Taste. Strong initial impression of tropical fruit and citrus; firm but smooth bitterness (approx. 65 IBU); low bready malt backbone provides a soft base for resinous hop flavors; crisp, dry finish with a lingering fruity and slightly resinous aftertaste.
