Omnipollo Empire is a monumental Imperial Stout that showcases an extraordinary 34-month triple-barrel journey. The initial aging in Willett Bourbon barrels imparts deep charred oak and spicy spirit notes, while the subsequent 16 months in Rum barrels contribute rich molasses and dark fruit complexity. A final rest in Maple Bourbon barrels adds a luxurious, wood-fired sweetness. The sensory profile is further elevated by a masterfully layered Vanilla blend from Comoros, Papua New Guinea, and Vanuatu, offering floral, creamy, and marshmallow-like nuances. This massive 14.8% ABV beer presents a harmonious synthesis of espresso-like roast, sticky maple syrup, and exotic spice, creating a profoundly deep and meditative experience.
Appearance. Jet black and completely opaque (40+ SRM). Pours with high viscosity, forming thick legs on the glass. The head is a deep tan to dark brown with low retention, common for such high alcohol and extensive barrel aging.
Aroma. High intensity and exceptionally complex. Dominant notes of rich vanilla, maple, and dark chocolate are supported by Willett Bourbon-derived oak and spirit. Rum-like esters of raisins, prunes, and molasses mingle with a secondary aroma of roasted coffee and charred wood. No significant hop aroma is present.
Taste. Massively flavored with an initial impression of sweet maple and creamy vanilla. The mid-palate reveals deep layers of dark chocolate, toasted malt, and espresso. Significant spirituous character from the bourbon and rum barrels provides a counterpoint to the sweetness. Bitterness is moderate-high but balanced by the intense malt and barrel sugars. The finish is long and warming, with lingering notes of oak, leather, and cocoa.
Mouthfeel. Very full-bodied, viscous, and chewy with a velvety, luscious texture. Carbonation is low, enhancing the beer's weight. A strong but smooth alcohol warmth is present throughout, reflecting the high ABV without being solventy.
