Designed as a non-fruity rebuttal to modern trends, this German Pils honors simplicity and craftsmanship. It presents a crisp, clean profile defined by flowery and herbal hop notes that avoid any tropical or ester-driven fruitiness. A base of continental Pilsner malt provides a foundation of toasted cracker and light honey, ensuring the beer remains balanced despite its firm, snappy bitterness. This 5.2% lager is brilliantly clear and highly attenuated, finishing bone-dry. It is a refined, classic expression of the style, focusing on a refreshing, clean character rather than a loud aromatic statement, providing a truly well-crafted experience.
Appearance. Brilliant straw to deep yellow (2–4 SRM) with a dense, creamy, and long-lasting white head that leaves persistent lacing.
Aroma. Moderate to moderately-high flowery and spicy hop intensity. Low to medium grainy, doughy, or toasted cracker malt character with a hint of honey. Clean fermentation profile with no esters or diacetyl.
Taste. Initial grainy malt flavor is quickly suppressed by a medium-high bitterness and herbal hop flavor. Features a dry, crisp finish with a clean fermentation profile. A light minerally character accentuates the dry aftertaste, where a lingering bitterness and touch of malt persist.
Mouthfeel. Medium-light body with medium to high carbonation. It feels crisp and refreshing, not heavy, with a slight flinty or minerally sharpness and no noticeable alcohol warmth.

It sounds pretentious and, in a way, it is… But with the release of this Omnipollo®German style pilsner we are in the center of a vortex of incidences telling us that all we want to drink is a truly well-crafted pilsner.
My own pilsner journey started long ago, and pilsner is still my favorite style of beer, but it totally seems like the right time to celebrate this style. The signs are there. Like when your favorite rapper doesn’t enjoy the IPA you had planned to brew in his honor, saying “none of that fruity stuff”. Orthe fact that for the last couple of years, all brewers at festivals will not be found drinking the latest hype brew, but instead gathering at the tap of whoever brought a classic pilsner.
A pils is sort of like your favorite t-shirt, you wear it often, but it is never a loud statement. So we raise our (pilsner) glass to you, and hope you will enjoy Devins German style pilsner and the rest of our pilsner journey. Be curious, be classic.
