This Imperial Stout represents a masterful collaboration between Omnipollo and Brooklyn Brewery, reimagining a classic recipe with the inclusion of the supergrain fonio. It pours a dense, midnight black, releasing a high-intensity aroma of bittersweet dark chocolate and heavy espresso. The fonio introduces a unique, subtle nuttiness and earthy cereal depth that complements the heavy roasted malt profile. On the palate, expect layered notes of cocoa nibs, burnt sugar, and dried figs, supported by an assertive bitterness. The texture is exceptionally velvety and chewy, carrying the 10% ABV with a smooth, integrated warmth that lingers into a roasty, bittersweet finish.
Appearance. SRM 40+. Jet black and opaque. Thick, creamy dark tan head with excellent retention and significant lacing. High viscosity is visible through heavy legs on the glass.
Aroma. High intensity. Pronounced notes of bittersweet chocolate, cocoa powder, and freshly roasted coffee beans. Moderate esters suggestive of raisins and prunes. The fonio contributes a distinct earthy, nutty, and toasted grain character. Low earthy hop presence.
Taste. Initial impression of rich dark chocolate and espresso. Strong roasted malt flavor with secondary notes of molasses and burnt sugar. The fonio grain provides a savory, nutty mid-palate complexity. Assertive hop bitterness balances the significant malt weight. The finish is long and roasty with a clean, warming aftertaste.
Mouthfeel. Full-bodied and exceptionally chewy; a viscous, liquid-food sensation. Moderate-low carbonation. Smooth, velvety texture with a noticeable but well-integrated alcohol warmth that is never sharp.
