This Wild Specialty Beer is an indulgent, sensory explosion defined by a massive addition of raspberries and smooth lactose sugar. It pours a dense, opaque ruby red with a vibrant pink foam. The aroma is dominated by jammy raspberry coulis and a soft, yogurt-like sweetness. On the palate, the intense, tart fruitiness is beautifully rounded by a creamy, velvety mouthfeel reminiscent of a lassi. A subtle salinity from the base Gose provides a refreshing counterpoint to the rich sweetness, finishing with a lingering, tangy berry brightness that masks its moderate strength.
Appearance. Saturated, deep ruby to magenta; opaque and smoothie-like. The thick, pink-tinted head shows moderate retention with creamy lacing.
Aroma. High intensity; overwhelming fresh raspberry puree and jam. Sweet cream and vanilla notes from lactose are underpinned by a clean, lactic tartness and a mineral-like saltiness.
Taste. Bold, jammy raspberry leads, followed immediately by a thick, milky sweetness from lactose. Moderate lactic acidity provides a sharp tang that prevents the profile from being cloying. A faint salinity emerges in the mid-palate. The finish is long and fruit-heavy, balancing tart berry skins with a sugary, smooth aftertaste.
Mouthfeel. Full-bodied and viscous; creamy and coating due to lactose and high fruit solids. Carbonation is moderate. No significant alcohol warmth.
