Omnipollo Augusta
This decadent Imperial Stout presents an opulent sensory journey, led by the intense interplay of barrel aging and rich adjuncts. At 12% ABV, it delivers a massive, viscous profile where charred oak and bourbon-like warmth meld seamlessly with the essence of toasted coconut and sweet vanilla. Deep layers of roasted hazelnut emerge against a backdrop of bittersweet chocolate and espresso-like malt depth. The experience is undeniably plush, balancing its immense sweetness with subtle spirit-derived tannins and dark fruit esters of raisin and prune. It is a harmonious, dessert-like expression that prioritizes a velvety, lingering finish of nuttiness and dark cocoa.
Appearance. Jet black and completely opaque (40+ SRM). It pours with a thick, deep tan head that shows moderate retention, leaving oily legs on the glass indicative of its high viscosity and alcohol content.
Aroma. High intensity and complex. A base of bittersweet chocolate, espresso, and black licorice is heavily layered with sweet vanilla, toasted coconut, and a distinct nutty hazelnut character. Secondary notes of charred oak and a vinous, spirit-like warmth are complemented by subtle dark fruit esters of raisin and fig.
Taste. Intense and rich initial impression of dark chocolate and toasted nuts. The mid-palate is dominated by creamy vanilla and sweet coconut, supported by a heavy malt backbone of toast and caramel. Hop bitterness is moderate but mostly masked by the residual sweetness and barrel tannins. The finish is long and warming, featuring lingering notes of hazelnut, cocoa, and oak.
Mouthfeel. Full to very full-bodied with a thick, chewy, and velvety texture. Carbonation is low to moderate, enhancing the luscious mouthfeel. A smooth, gentle alcohol warmth is prominent but well-integrated, with no harsh astringency.
