This massive Imperial Stout presents a profound sensory depth, born from a grueling seven-hour boil that intensifies its viscous, near-syrupy character. The inclusion of maple syrup lends a decadent, woody sweetness that interlaces with scorched earth and bittersweet cocoa notes. Despite the high 12.5% alcohol content, the warmth is well-integrated, providing a foundation for layers of dark fruit—reminiscent of prunes and black currants—developed through extended Maillard reactions. It is a decadent, complex liquid where the intense roast is softened by the earthy maple, finishing with a lingering, bittersweet resonance of espresso and dark caramel.
Appearance. Jet black and completely opaque. A thick, creamy, deep tan head provides moderate retention, leaving behind oily legs on the glass indicative of its high viscosity and significant alcohol content.
Aroma. High intensity aroma dominated by bittersweet chocolate, espresso, and heavily toasted grain. The extended boil contributes deep notes of burnt sugar and dark caramel, while the maple syrup adds a distinct woody sweetness and earthy undertone. Esters are moderate, suggesting dried plums and raisins. Hop character is very low, providing just a hint of earthy spice.
