Ventora presents a Mediterranean interpretation of a Belgian Witbier, utilizing local Tritticum Dicocco spelt to enhance its rustic grain profile. The sensory experience opens with a vibrant bouquet of cracked grain and soft floral honey, punctuated by the classic interplay of zesty orange peel and peppery coriander. The palate is light and incredibly refreshing, where the nutty, bready nuances of the alternative grain provide a smooth foundation for citrus-forward flavors. A gentle, honeyed sweetness lingers momentarily before a crisp, dry finish takes over, driven by high carbonation and a clean fermentation profile that emphasizes the beer's elegant, farm-to-glass character.
Appearance. Pale straw to light gold (SRM 2-4). Dense, white, creamy head with good retention. Clearly hazy to opaque due to the use of spelt and lack of filtration.
Aroma. Moderate intensity with a distinct grainy-sweet malt profile featuring bready and lightly nutty spelt notes. Prominent aromatics of citrusy orange peel and spicy, herbal coriander. A subtle, floral honey sweetness is present alongside light pome fruit esters from the top-fermenting yeast.
Taste. Initial bready and grainy malt sweetness from the spelt. Mid-palate flavors of zest and herbal spice are balanced by a delicate honey character. Hop bitterness is low, serving only to prevent the beer from being cloying. Finishes dry and refreshing with a clean, spicy aftertaste of coriander and orange.
Mouthfeel. Medium-light body with a notable creaminess and silkiness from the high protein content of the spelt. High carbonation provides a lively, effervescent mouthfeel. Extremely low alcohol warmth with no astringency.
