This session-strength ale leads with a refreshing, woodsy aroma, where the leafy, botanical notes of birch mingle with classic peppery yeast phenolics. The sensory experience is defined by its remarkable lightness and high attenuation, offering a crisp, cracker-like malt profile that supports nuanced citrus esters. The finish is exceptionally dry and effervescent, leaving a lingering, forest-like earthiness on the palate that mimics the rejuvenating atmosphere of a traditional sauna, making it an incredibly revitalizing and unique botanical ale.
Appearance. Pale gold (approximately 5 SRM) with a slight, natural haze. Topped by a dense, rocky, white head that exhibits excellent retention and leaves intricate Belgian lace on the glass.
Aroma. Moderate intensity featuring a complex blend of spicy white pepper and citrusy esters like lemon peel and pear. The addition of birch whisks provides a distinctive fresh-cut wood and herbal, leafy character. Low grainy malt notes provide a soft background.
Taste. Initial impression is crisp and highly refreshing. Low grainy malt flavor is quickly overtaken by spicy yeast character and a unique, savory woodsy note from the birch. Hop bitterness is moderate but feels firm due to the very dry, highly attenuated finish. Aftertaste is clean with lingering botanical and peppery notes.
Mouthfeel. Light body with very high carbonation, creating an effervescent, prickly sensation on the tongue. No alcohol warmth is present given the sessionable strength. Finishes clean without any lingering sweetness or astringency.
