Heeft rijpe appel in de neus, wat citrusfruit in de mond, met een verkwikkende zuurtje en zachte tannines in de afdronk.   Spontaan gefermenteerd in roestvrijstalen tanks vol Michelin (Bistrot) bitterzoete appels en extra pit van de soorten Yarlington Mill en Dabinett, en scherpte van Foxwhelp.
