Visby is a rustic and evocative Smoked Beer, crafted as a collaboration between Old Irving and Hammerheart. Inspired by the ancient Gotlandsdricka of Sweden, it presents an assertive yet balanced profile of hardwood smoke reminiscent of alder and birch. The malt backbone offers deep layers of toasted bread and dark caramel, providing a sturdy foundation for the distinctive, herbal presence of juniper branches. This farmhouse-inspired ale balances savory, campfire-like smoke with a subtle, resinous bitterness and a touch of earthiness. The result is a complex, medium-bodied experience that honors Viking-era tradition with a clean, lingering smoky finish.
Appearance. Deep copper to mahogany (SRM 18–24) with a slight, style-appropriate haze. It supports a dense, creamy, off-white head with excellent retention and moderate lacing.
Aroma. High intensity of aromatic wood smoke, suggestive of birch or alder. Moderate bready and toasted malt sweetness underpins the smoke, complemented by low to moderate spicy, resinous juniper and a hint of earthy hops. Clean fermentation with minimal esters.
Taste. Initial impression of rich, toasted malt and caramel sweetness immediately followed by assertive hardwood smoke. The smoke is savory and clean, lacking harsh ashiness. Mid-palette reveals herbal juniper and a mild, earthy bitterness. The finish is medium-dry, where the smoke adds a lingering, pleasant dryness alongside a faint bready aftertaste.
