This assertive Double IPA presents a vivid sensory showcase of high-intensity hops, driven by massive triple dry-hop additions of Cascade, Mosaic, and Citra. The aromatic profile is dominated by bright notes of pomelo, tropical mango, and resinous pine, supported by a subtle, clean bread-like malt backdrop. Despite its formidable strength and 110 IBU bitterness, the experience remains remarkably approachable. On the palate, a clean and sharp bitterness leads into a wave of citrus and resinous hop flavors that linger long into the finish. Yarará balances its substantial power with a lighter-than-expected body, ensuring the complex hop character remains the undisputed star of every sip.
Appearance. Deep gold color (approx. 7 SRM). Features a persistent, moderate-sized white head with good lacing. Generally clear, though a very slight hop haze is present due to heavy dry-hopping.
Aroma. High intensity hop aroma featuring prominent notes of grapefruit, mango, and resinous pine. A clean, low, grainy-bread malt character sits in the background. Fermentation is clean and neutral, with a very light, smooth alcohol note that complements the hops.
Taste. Strong and complex hop flavors of citrus zest, tropical fruit, and pine. Bitterness is very high but exceptionally clean and devoid of harshness. Low, supportive malt flavor provides a neutral base. The finish is very dry and crisp, leading into a lingering, intense aftertaste of fruity and resinous hops.
Mouthfeel. Medium-light body with a smooth, lean texture that enhances drinkability. Carbonation is medium-high. A noticeable but well-integrated alcohol warmth is present, without any hop-derived astringency.
