Off Color Brewing Ghost Lemons

This collaboration between Off Color and Allagash reimagines the classic Witbier through a rustic, slightly wild lens. Inspired by the iconic Allagash White, it presents a complex sensory bouquet of preserved lemon, summer peach, and citrus marmalade. A background of sun-dried hay and subtle barnyard funk provides a bucolic depth, while notes of kiwi and a verdant, round character soften the palate. The experience concludes with a refreshing, bone-dry finish marked by a distinct saline edge reminiscent of brackish water and a faint, mouth-watering tartness. It is an evocative, highly attenuated take on the Belgian wheat tradition, balancing bright fruit against earthy, funky undertones.
Appearance. Very pale straw with a milky, whitish-yellow shine; very cloudy with a dense, white, moussy head that exhibits excellent retention and fine lacing.
Aroma. Moderate bready and grainy wheat maltiness with high intensity. Prominent notes of preserved lemon, peach, and citrus zest are layered over herbal hay and a distinct barnyard funk. Subtly spicy coriander and a faint saline mineral note provide complexity.
Taste. Initial impressions of bready malt and citrus marmalade lead to a mid-palate of kiwi and stone fruit. Low bitterness is complemented by a twinge of lactic tartness. The flavor profile is complex and rustic, featuring herbal-spicy notes and a light salinity. The finish is bone dry, clean, and remarkably refreshing without any lingering harshness.
Mouthfeel. Medium-light body with a round, verdant mouthfeel. Effervescent and highly carbonated, providing a crisp, prickly sensation. Finishes very dry with no alcoholic warmth or astringency.
