Off Color Brewing Aqua Predator
Aqua Predator is a vibrant Saison that captures the rustic spirit of farmhouse brewing through the inclusion of wet Michigan Crystal hops. This addition infuses the beer with an unmistakable harvest freshness, manifesting as earthy, floral, and slightly woody notes that intertwine with the yeast’s spicy, black pepper phenolics. On the palate, the high attenuation creates a bone-dry finish, allowing the bright citrus and pome fruit esters to shine against a soft, grainy malt backdrop. Effervescent and crisp, the beer balances its firm bitterness with a refreshing, prickly carbonation, resulting in a complex yet highly drinkable expression of the style.
Appearance. Pale, hazy gold (SRM 6) with a massive, rocky, brilliant white head that exhibits exceptional retention and leaves dense Belgian lace on the glass; highly effervescent with visible rising bubbles.
Aroma. High intensity of spicy yeast phenolics, specifically black pepper and a hint of clove, paired with moderate fruity esters of lemon zest and green apple. The Michigan Crystal hops contribute a distinctively fresh, grassy, and floral character with woodsy undertones, layered over a light, crackery malt aroma.
Taste. Initial impression is very dry and crisp. Flavors of peppery spice and citrus zest dominate the start, followed by the resinous and herbal flavors of fresh Michigan Crystal hops. The malt provides a low, grainy sweetness that is quickly overtaken by a moderate-high bitterness and high attenuation. The finish is remarkably clean, dry, and lingering with a spicy, floral aftertaste.
Mouthfeel. Medium-light body with very high, prickly carbonation that creates a refreshing, effervescent sensation. No astringency from the wet hops is present; a very light, well-integrated alcohol warmth is perceptible in the throat.
