Appearance. Pours a hazy, pale straw color (4-5 SRM) with a tall, rocky, and persistent white head that leaves significant Belgian lace. Highly effervescent with fine, rising bubbles.
Aroma. Moderate to high intensity featuring a mix of lemon zest, unripe pear, and white pepper. The red wine barrel adds a subtle vinous character and a light lactic tang, while the malt remains lightly grainy and rustic.
Taste. Initial impression is bright and tart. The malt flavor is low, providing a soft wheat base. Yeast-derived flavors of black pepper and citrus are prominent, complemented by a light oak tannin and vinous depth from the wood. Bitterness is low, as the crisp acidity provides the primary balance against the dry, grainy finish.
Mouthfeel. Light to medium-light body with high, effervescent carbonation. Very low alcohol warmth. A delicate tannic astringency from the red wine barrels adds structure to the otherwise clean and crisp palate.
