Panorama presents a refreshing, tart reinvention of a classic pilsner, crafted with a 100% Pilsner malt base and soured via Lactobacillus. This Straight Sour Beer radiates a clean, lemony lactic acidity that harmonizes with the grainy, crackery sweetness of the malt. While the style typically avoids prominent hops, this collaboration with LAB 111 utilizes Czech and German hops to introduce a distinctive layer of citrus fruit and spicy, grassy aromatics through dry hopping. The result is an effervescent, crisp experience where the bright acidity elevates the herbal hop character, leading to a bone-dry, thirst-quenching finish that remains sophisticated, balanced, and remarkably bright.
Appearance. Pale straw to light gold (2-3 SRM). Large, dense white head with moderate to poor retention. Appearance ranges from clear to a slight haze, likely due to the dry-hopping process.
Aroma. Moderate to high intensity. Clean lactic sourness dominates with a sharp, lemony edge. Backed by bready, crackery notes from the Pilsner malt. Notable grassy, spicy, and light citrus hop character is present from the Czech and German hop additions. Clean fermentation profile with no Brettanomyces or funk.
Taste. Sharp, clean lactic tartness is the primary impression, followed by a soft, grainy, and bready malt backbone. Hop flavor is subtle but distinct, contributing spicy, herbal, and citrus notes. Bitterness is very low, nearly undetectable, allowing the acidity to provide the primary balance. The finish is crisp and very dry with a lingering lemony acidity.
Mouthfeel. Light body. High carbonation provides an effervescent, prickly sensation on the tongue. Crisp acidity creates a refreshing mouth-puckering quality. Very low alcohol warmth, well-integrated at 5% ABV.
