This sophisticated Saison bridges the gap between Belgian brewing and Italian viticulture. A blend of Witbier and light Saison, it benefits from the structural complexity of 2019 Vespaiolo white wine and oak barrel aging. The profile opens with elegant stone fruit and floral honey notes driven by the Vespaiolo grapes, layered over a rustic grain base of wheat and pilsner malt. Fermentation with indigenous grape yeast introduces a wild, peppery phenol and a delicate vinous tartness. It finishes exceptionally dry and effervescent, with subtle oak tannins and a refined alcohol warmth that complements the bright, citrusy character of the Witbier components.
Appearance. Pale gold with a slight hazy luminescence. Pours with a dense, persistent ivory head that leaves delicate Belgian lacing. Effervescent with fine, rising bubbles.
Aroma. High intensity and complex. A dominant vinous character of white grapes and apricot is met by spicy yeast phenols reminiscent of white pepper. The Witbier base adds hints of coriander and dried orange peel, while the indigenous yeast provides a mild, earthy funk. Faint notes of toasted oak and vanilla linger in the background.
Taste. Initial impression is bright and tart, moving quickly into a complex middle of honeyed grain and pome fruit. Low hop bitterness is supplemented by a wine-like acidity and grape skin tannins. The fermentation profile is peppery and dry, with the Vespaiolo wine adding depth to the citrusy Witbier notes. The finish is remarkably dry, clean, and lingering with a touch of spicy alcohol.
Mouthfeel. Medium body with a crisp, highly carbonated, and effervescent texture. A noticeable but well-integrated alcohol warmth is present. Low astringency from the oak barrels provides a structured, drying sensation on the palate.
