Oedipus

This elevated Saison presents a sophisticated fusion of rustic farmhouse character and refined barrel aging. The profile is defined by a complex interplay between the spicy black pepper phenols of the yeast and the vinous, acidic qualities derived from white wine casks. Deep gold in the glass, it offers an aromatic bouquet of stone fruits and floral notes, underpinned by the rich, oaky warmth and dried fruit nuances of Cognac maturation. Despite its robust strength, the beer remains remarkably effervescent and dry, balancing grainy malt with a structured, tannic finish. It is a harmonious marriage of traditional Belgian fermentation and spirited wood influence.

Appearance. Deep gold to light amber in color (SRM 8-12) with a slight haze from being unfiltered. It supports a long-lasting, dense, rocky ivory head with significant lacing and constant effervescence.

Aroma. High aromatic intensity featuring a mix of citrus and pome fruit esters. Notable spicy black pepper phenols from the yeast are complemented by vinous white grape, vanilla-scented oak, and a subtle spirit-forward Cognac warmth. Malt is lightly grainy and rustic.

Taste. A complex balance of grainy malt and spicy yeast phenols. Initial fruity impressions of pear and citrus are quickly joined by white wine acidity and Cognac-driven notes of oak and dried apricot. It possesses a moderate hop bitterness that is accentuated by wood tannins. The finish is very dry and highly attenuated with a lingering spicy and boozy aftertaste.

Mouthfeel. Medium body with a very high, effervescent carbonation. Noticeable alcohol warmth provides a pleasant glow without being harsh. A light tannic astringency from the barrel aging adds structure to the palate.
