Oedipus

Gigetta is a sophisticated, barrel-aged Saison that artfully blends the brightness of a Witbier with the depth of a red wine barrel-aged ale. Fermented with both wine yeast and an indigenous yeast culture from Vignaioli Contrà Soarda, it offers a vibrant sensory journey. The aroma is a complex tapestry of zesty citrus—recalling lemon peel and grapefruit—interwoven with spicy phenols and a distinctive woody undertone from the year-long barrel rest. On the palate, a refreshing sourness cuts through the rustic wheat malt profile, revealing layers of vinous fruit, cracked pepper, and a subtle tannic structure. The finish is exceptionally dry and effervescent, leaving a lingering trail of oak and spice.

Appearance. Pale gold with soft orange hues (7 SRM). Topped by a massive, rocky, white head with excellent persistence and intricate Belgian lacing. Unfiltered and hazy, owing to the Witbier component and indigenous cultures.

Aroma. High intensity. Bold aromas of zesty lemon and orange peel dominate, followed by spicy black pepper and a hint of coriander. The barrel aging contributes distinct vinous notes—reminiscent of dried berries and oak—alongside a funky, earthy complexity from the indigenous yeast. Low grainy-sweet malt presence.

Taste. Initial impression is sharply tart, transitioning into a complex blend of citrus zest and spicy yeast. Low grainy malt flavor provides a soft foundation for the dominant sour profile. Hop bitterness is low, as the acidity provides the primary balance. Flavors of aged oak and subtle red wine tannins persist into a very dry, crisp finish. The aftertaste is a lingering mix of spicy phenols and woody earthiness.

Mouthfeel. Medium body with high, prickly carbonation that creates a refreshing, effervescent mouthfeel. A light alcoholic warmth is noticeable but well-integrated. A touch of tannic astringency from the red wine barrels adds structure without being harsh.
