Saison 8 º 20 IBU
This Imperial Saison is a bold collaboration that bridges the gap between Belgian farmhouse tradition and modern hop intensity. A complex grist of wheat, rye, and oats provides a rustic, textured foundation for an aggressive hopping schedule. Tropical fruit dominance from Simcoe, Citra, and Mosaic drives the primary profile, offering notes of mango and passionfruit. This is balanced by the noble, grassy, and herbal refinement of Styrian Goldings and Saaz. Fermentation with a traditional Saison yeast imparts a signature peppery snap and fruity esters, culminating in a signature dry finish that belies its substantial 8% strength.
Appearance. Pale gold to light amber (6–8 SRM). Naturally hazy due to the high proportion of wheat, rye, and oats, as well as heavy dry-hopping. Features a dense, rocky, long-lasting ivory head with exceptional lacing.
Aroma. High aromatic intensity. A vibrant bouquet of tropical fruits—mango, pineapple, and citrus—from Simcoe, Citra, and Mosaic. Secondary notes of fresh-cut grass and herbal spice from Saaz and Styrian Goldings. Yeast-driven black pepper phenols and pome fruit esters are prominent, over a light, bready, and slightly spicy grain base.
Taste. Initial impression is a burst of tropical hop flavors followed quickly by a spicy, peppery yeast character. The malt provides a soft, grainy palate with a distinct rye spiciness. Bitterness is firm and assertive, akin to an American IPA, but remains balanced by the esters. The finish is remarkably dry and clean, with a lingering aftertaste of citrus peel and cracked peppercorns.
Mouthfeel. Medium body with a creamy, silky texture from the oats and wheat. Carbonation is high and effervescent, creating a prickly sensation on the tongue. A noticeable but well-integrated alcohol warmth is present. Low astringency despite the heavy hopping.
