This Flanders Red Ale presents a sophisticated, wine-like sensory profile evocative of a vintage Burgundy. The complex bouquet opens with high-intensity aromas of black cherries, tart cranberries, and ripe plums, layered over a foundation of toasted bread malt. A multi-year barrel aging process introduces significant French oak tannins and a rustic Brettanomyces funk that integrates seamlessly with the sharp, mixed-culture acidity. On the palate, the initial malt sweetness is deftly balanced by a prickly tartness and lingering dark fruit notes. The finish is dry and tannic, showcasing the depth of its twenty-six-month aging and a refined, acidic structure.
Appearance. Deep burgundy to reddish-brown in color (14-17 SRM) with brilliant clarity. It carries a thin, off-white to pale tan head with moderate retention and light lacing.
Aroma. High intensity fruity-sour profile dominated by cherries, plums, and cranberries. Secondary notes of toasted bread and subtle vanilla from French oak provide a rich malt backing. Low but noticeable acetic acid adds a sharp edge, complemented by a complex, earthy Brettanomyces funk. No hop aroma.
Taste. Intense dark fruit flavors including cherry and plum lead into a complex tartness reminiscent of red currants. The mid-palate features a soft, toasty malt richness. Bitterness is low, as the balance is driven by acidity and firm oak tannins. The finish is dry and lingering, with a clean, acidic bite and a subtle, funky aftertaste.
Mouthfeel. Medium body with a prickly, moderate to high carbonation. Noticeable astringency from French oak tannins provides structure and a wine-like mouth-puckering quality. At 7% ABV, there is a very light, well-integrated alcohol warmth.
