Served still, the absence of carbonation emphasizes a luxurious, full-bodied sweetness that supports concentrated fruit notes of plums, dates, and figs. A firm, balsamic-like acidity cuts through the malt weight, while the long oak aging contributes structural tannins and vinous depth. It is a powerful, meditative ale that balances rustic sourness with the sophisticated oxidative character of a fine red wine.
Appearance. Deep reddish-brown to mahogany (22 SRM); served still with no head or lacing; excellent clarity with a dark garnet hue when held to the light.
Aroma. High intensity; rich toasted malt character with hints of chocolate and coffee; layered dark fruit esters of plum and black cherry; significant dried fruit notes of fig and date; sharp but pleasant balsamic acidity; distinct red wine and oak influence.
Taste.
