Octavo Arte Bloody Cherry presents a vibrant sensory experience, reimagining the traditional Gose through the lens of a Catharina Sour. This deep crimson pour leads with an explosive aroma of fresh black cherry, supported by a clean, lactic tartness. On the palate, the stone fruit dominance is balanced by a subtle bready wheat backbone and the signature salt character, which enhances the juicy, succulent nature of the fruit. Despite its 6% ABV, the beer remains exceptionally refreshing, finishing dry with a lingering acidic pucker and a faint, spicy hint of coriander. It is a bold, fruit-forward interpretation where salinity provides a savory counterpoint to the intense cherry profile.
Appearance.Intense blood-red to deep crimson color. Unfiltered with a moderate to full haze. Features a moderate, pink-tinted head with tight bubbles and good retention. Highly effervescent.
Aroma.High intensity of fresh black cherry and stone fruit. Clean lactic sourness provides a bright, lemony edge. Low bready or doughy wheat malt character. Very low spicy coriander and a faint, clean mineral salt note. No hop aroma or esters.
Taste.Sharp, clean lactic sourness is immediate, followed by a dominant, juicy black cherry flavor. Moderate bready malt provides a brief middle before a dry, fully-attenuated finish. Salt is noticeable but restrained, contributing a mouthwatering quality rather than overt saltiness. Very low bitterness with no hop flavor; acidity and salt balance the fruit and malt.
Mouthfeel.Medium-light body with high to very high carbonation. Effervescent and tingly on the tongue. Light alcohol warmth is present but well-integrated. The salt provides a rounded, slightly thicker mouthfeel that offsets the thinning effects of the acidity.
