This matured Brett Beer presents a complex sensory tapestry woven from two years of oak maturation and the unique cold-hopping of Tardif de Bourgogne. The extended aging imparts a sophisticated funk characterized by notes of leather and wet hay, while the ancient French hop variety introduces an unconventional aromatic profile of Lavender, Laurel, and Melissa. On the palate, the beer is remarkably dry and crisp, reflecting deep attenuation from the wild yeast. Delicate oak tannins provide structure, supporting a blend of herbal hop nuances and stone fruit esters. It is a refined wild ale that balances historical hop character with rustic depth.
Appearance. Pours a luminous pale gold to light amber (5–9 SRM) with a fine-beaded white head that exhibits moderate retention. Clarity ranges from clear to a slight hazy shimmer, typical of a long-aged blended ale.
Aroma. High intensity with a multifaceted herbal character; prominent Lavender, Laurel, and lemon-balm Melissa from the Tardif de Bourgogne hops. This is supported by developed Brettanomyces funk, including earthy barnyard and aged hay, alongside subtle toasted oak and a hint of apricot-like esters.
Taste. Bone-dry initial impression with high attenuation. Flavors of Lavender and Laurel dominate the mid-palate, layered over a lean, cracker-like malt base. Brettanomyces contributions are complex but integrated, offering earthy and leathery notes rather than sharp acidity. Low bitterness is balanced by a light, bright tang and a finish of lingering herbal spice and woody tannins.
Mouthfeel. Medium-light body with a crisp, effervescent carbonation that provides a prickly, refreshing texture. Includes a very light, pleasant oak-derived astringency and a subtle, well-integrated alcohol warmth.
