This Tableau Jaune captures the essence of a vibrant Brett Beer built upon a rustic Grisette foundation. Fermented with wild yeast cultures, it presents an immediate, sun-drenched bouquet of fresh peach and apricot pulp, which softens the traditional dry, peppery nature of the base style. The young wild yeast emphasizes stone fruit and tropical esters over aggressive funk, while the malt profile offers a subtle, grainy backdrop of wheat and spelt. It finishes exceptionally dry and crisp, with a light mineral edge and a delicate, ephemeral tartness that highlights the natural orchard fruit character without the weight of heavy sugars.
Appearance. 3–4 SRM. Pours a hazy, pale straw with a voluminous, mousse-like white head that dissipates to a thin collar, leaving fine lacing.
Aroma. High intensity. Vibrant aromatics of fuzzy peach skin, ripe apricot, and tropical pineapple dominate. Behind the fruit lies a rustic malt character of raw grain and cracked wheat, accented by a faint, earthy Brett funk and a floral, hay-like hop presence.
Taste. The initial impression is bone-dry and fruit-forward. Intense flavors of tart apricot and juicy peach meld with a lemony, wild yeast ester profile. Malt flavors are restrained, showing as a light cracker-like crispness. Bitterness is low, allowing a subtle, non-lactic tang to provide structure. The finish is short, clean, and remarkably refreshing.
Mouthfeel. Light body with an airy, effervescent quality. High carbonation provides a prickly sensation on the tongue. Very low astringency and no perceived alcohol warmth.
