Observatoriet Rakel is a complex Brett Beer that bridges Nordic heritage with modern craft innovation. Aged for nine months in oak foudres, it presents a multifaceted bouquet where the resinous, herbal spice of wildly sourced Myrica Gale intertwines with the vibrant citrus and pine notes of American hops. The Brettanomyces influence yields a distinctively dry profile characterized by rustic notes of wet hay and aged leather, while the extended wood aging imparts a structured, tannic backbone. The result is an intense, highly attenuated wild ale that balances wild fermentation funk with a clean, botanical-forward bitterness and a crisp, refreshing finish.
Appearance. Deep gold to light amber (7-12 SRM). Pours with a moderate, off-white head that shows fair retention and leaves light lacing. Displays a slight haze likely due to the inclusion of fresh botanicals and dry-hopping.
Aroma. High intensity. The primary nose is a blend of resinous, peppery Myrica Gale and citrusy American hop aromatics. Beneath the botanicals, a moderate Brettanomyces character emerges with notes of barnyard funk, damp earth, and stone fruit esters. A subtle vanillin and toasted oak presence from the foudre adds aromatic depth.
Taste. The initial impression is exceptionally dry and herbal. Flavors of dried herbs, eucalyptus, and resin from the Myrica Gale are prominent, followed by grapefruit and tropical fruit notes from the American hops. Minimal malt sweetness is quickly overtaken by a moderate bitterness and wood-derived tannins. Fermentation character provides a light, non-lactic tartness and complex funk. The finish is long, dry, and botanical.
Mouthfeel. Medium-light body with high attenuation. Moderate to high carbonation creates a lively, effervescent mouthfeel. A light tannic astringency from the oak and botanicals adds structure. Alcohol warmth is well-integrated and subtle.
