O Brother Brewing Opus One

Opus One presents as a luxurious Imperial Stout, enriched by nine months of maturation in Fercullen 18-year-old Single Malt and 8-year-old Single Grain Whiskey barrels. The sensory experience is dominated by an intense interplay of bittersweet dark chocolate and roasted espresso notes, harmonized by the barrel's contribution of honeyed vanilla, toasted oak, and a refined whiskey warmth. Dark fruit esters of raisin and fig emerge alongside a subtle grain sweetness. At 12.5%, the alcohol is integrated and smooth, providing a sophisticated, vinous character that complements the decadent malt profile. The finish is long and bittersweet, revealing layers of complexity from both the roasted grains and the Irish whiskey influence.
Appearance. Jet black and completely opaque. Pours with a thick, deep tan to dark brown head with moderate retention. Due to the high alcohol content and 12.5% ABV, prominent legs are visible on the glass after swirling.
Aroma. High intensity with a complex blend of roasted coffee, dark chocolate, and black licorice. Significant barrel-derived notes of vanilla, toasted oak, and a hint of honeyed grain from the Fercullen whiskey. Moderate esters of dried plum and raisin are present, accompanied by a smooth, well-integrated alcohol warmth.
Taste. The initial impression is one of intense richness, featuring layers of bittersweet cocoa, espresso, and molasses. The whiskey barrel aging contributes flavors of caramel, honeycomb, and a soft oak tannin. Bitterness is firm but balanced by the massive malt backbone. The finish is long and warming with lingering notes of dark fruit, roasted grain, and a touch of vinous character.
Mouthfeel. Full-bodied and chewy with a velvety, luscious texture. Carbonation is low to moderate, enhancing the beer's substantial weight. A gentle, smooth warmth is clearly noticeable but never hot or solventy, reflecting the extended barrel maturation.
