Fantome is a vibrant Double IPA that showcases a powerful hop alliance between classic Cascade and modern Cryo Idaho 7. The sensory profile is led by an intense burst of pink grapefruit and floral blossoms, transitioning into deeper layers of resinous pine and ripe tropical fruit. On the palate, a lean, cracker-like malt base provides a clean canvas for high, yet smooth, bitterness. The Cryo Idaho 7 adds a distinctive piney complexity and stone fruit depth that lingers into a crisp, dry finish. At 8% ABV, it presents a subtle, integrated warmth that enhances its bold character while maintaining exceptional drinkability.

Appearance. Deep gold to light orange (7-9 SRM). Large, persistent off-white head with excellent lacing. Good clarity with only a very slight haze from heavy dry-hopping.

Aroma. High intensity hop aroma featuring prominent grapefruit and floral notes from the Cascade, supported by tropical fruit, apricot, and resinous pine from the Idaho 7. Background malt is clean, neutral, and slightly grainy. Low to no yeast esters; clean fermentation profile.

Taste. Initial impression is a wave of citrus and resin. Hop flavors of grapefruit and floral tea dominate, followed by tropical stone fruit. High bitterness that is firm but smooth, lacking harshness. Clean, supportive malt with a light crackery character. Very dry finish with a long, resinous, and fruity aftertaste.

Mouthfeel. Medium body with a smooth, slick texture. Medium-high carbonation. Notable but well-integrated alcohol warmth that provides a smooth glow without being solventy. No hop-derived astringency.
