Bourdon is a sophisticated Double IPA that centers on a powerful hop trio. The inclusion of Columbus provides an essential resinous and spicy foundation, grounding the beer with classic dankness and herbal complexity. This is layered with the concentrated punch of Cryo Idaho 7 and Cryo Mosaic, which explode with vibrant notes of ripe papaya, stone fruit, and zesty tangerine. At 8% ABV, the beer maintains high drinkability, supported by a lean malt profile that emphasizes the hop intensity. A crisp, drying finish ensures the experience remains clean, leaving a lingering trail of pine and tropical fruit on the palate.

Appearance. Gold to light orange-copper (6-9 SRM). Pours with a moderate-sized, persistent, off-white head that leaves significant lacing. Good clarity, though a very slight hop haze is present due to heavy dry-hopping.

Aroma. High intensity hop aroma featuring a complex blend of pine, resin, and black pepper from the Columbus, alongside tropical papaya, apricot, and blueberry notes from the Cryo Idaho 7 and Cryo Mosaic. Low, neutral, grainy-sweet malt in the background.

Taste. Initial impression is a wave of tropical and stone fruit flavors followed quickly by a firm, resinous bitterness. Columbus provides an earthy, spicy backbone, while the Cryo hops contribute clean tangerine and berry flavors. Malt character is unobtrusive and slightly bready. Finishes dry and clean with a lingering hop-derived bitterness that is prominent but not harsh.

Mouthfeel. Medium body with a smooth, velvety texture. Carbonation is medium-high. A light, pleasant alcohol warmth is present but well-integrated, with no hop-derived astringency.
