This contemporary Gose presents a vibrant, sensory-driven interpretation of the style, centered on bright acidity and tropical complexity. The addition of juicy pineapple provides a lush fruit core, while zesty lemon and fragrant lemongrass elevate the aromatics with a sharp, botanical clarity. A delicate inclusion of sea salt enhances the mouthfeel, providing a subtle mineral tingle that balances the lactic tartness and bready wheat base. The 5.7% ABV offers more structure than historical examples, yet the finish remains crisp and dry. Refreshing and layered, it harmonizes fruit-forward sweetness with a refreshing, saline-driven snap that is remarkably drinkable.

Appearance. SRM 3-4. Unfiltered with a moderate to full haze, displaying a pale straw-yellow color. It features a moderate, bright white head with tight bubbles and fair retention, leaving light lacing.

Aroma. High intensity aromatics featuring a dominant citrus profile of fresh lemon and herbal lemongrass. A distinct tropical layer of ripe pineapple follows, supported by a light, doughy Pilsner and wheat malt sweetness. A clean, subtle mineral salt note is present, without any detectable hop aroma.

Taste. The initial impression is one of bright, refreshing lactic tartness. Juicy pineapple flavor melds with sharp lemon zest, while the lemongrass adds a complex botanical depth. A soft, bready malt foundation is present but secondary to the fruit. Bitterness is very low; instead, the acidity and a noticeable sea salt salinity provide the primary balance.
