This Gose offers a vibrant, sensory-driven profile defined by the bright interplay of tart gooseberry and fresh thyme. The aroma is dominated by sharp lemon citrus and the distinctively earthy, peppery fragrance of thyme, layered over a subtle, doughy wheat malt base. On the palate, the crisp acidity of the gooseberry is expertly balanced by a delicate touch of salt, which provides a mouthwatering quality and rounds out the sharp fruit character. Effervescent and refreshing, it finishes remarkably dry, leaving a lingering impression of herbal complexity and clean, lactic tartness.
Appearance. 3–4 SRM; pale straw to light yellow color. Unfiltered with a moderate haze. Pours with a tall, white, effervescent head featuring tight bubbles and good retention.
Aroma. Moderate to high intensity. Dominated by sharp, citrusy lemon and the distinct green, tart scent of gooseberries. A strong herbal presence of thyme adds earthy and peppery-citrus layers. Malt is low, providing a clean, doughy wheat backdrop. Hop aroma is absent; fermentation is clean with a bright lactic tartness.
Taste. Immediate tartness from gooseberry and lemon, followed by a savory, herbal mid-palate of earthy thyme. Very low hop bitterness, with the balance driven by acidity rather than hops. Malt flavor is low to moderate, tasting of fresh bread dough. The salt is noticeable but restrained, enhancing the fruit and herbal flavors. Finishes very dry and crisp with a refreshing, salty-sour tingle and a touch of herbal spice.
Mouthfeel. Medium-light body, feeling slightly rounder and fuller due to the salt addition. High carbonation contributes to a refreshing, effervescent quality. No alcohol warmth. Very slight mouthwatering sensation from salt and acid, with no astringency.
