This West Coast IPA delivers a sharp, sensory-focused showcase of the Nelson Sauvin hop, emphasizing a brilliant clarity and an exceptionally 'crispy' profile. The aroma is dominated by the hop's signature white grape and gooseberry notes, transitioning into a complex palate of peach, lychee, and tropical mango. Fermented bone-dry, the beer features a minimalist malt backbone that allows a firm, clean bitterness and a bright twist of lime to shine. Its high drinkability and lean structure exemplify the modern approach to the style, highlighting the unique, wine-like fruit character typical of its New Zealand hop origins.
Appearance. Medium gold (6-7 SRM). Brilliantly clear with high transparency. Features a medium-sized, white, persistent head with fine-textured lacing.
Aroma. High intensity hop aroma with prominent crushed white grape, gooseberry, and passionfruit. Substantial notes of peach and mango are supported by a very low, clean, crackery malt presence. Fermentation is neutral and free of spicy phenols or heavy esters.
Taste. Vibrant hop-forward flavors of gooseberry, lychee, and lime zest. Bitterness is medium-high to high and very clean, cutting through a minimal, grainy-sweet malt base. The finish is bone-dry and crisp with a lingering, resinous, and fruity aftertaste. No diacetyl or harshness.
Mouthfeel. Medium-light body with a crisp, snappy texture. High carbonation provides a lively, refreshing sensation. Alcohol warmth is very light and well-integrated; no astringency.
